Valentine Sugar Cookies

sugar cookies 1Valentine’s Day is almost here. That means it’s the perfect time to treat yourself to a batch of delicious sugar cookies. These sugar cookies are light and fluffy . . . heart eyes for days. Making them will leave a magical whiff of vanilla and lemon floating about your kitchen. Bake some up and decorate them at a party. Arrange a plate for a neighbor or loved one . . . or devour a plate all by yourself. Whatever.

I may or may not have eaten three or four of these for breakfast. Oops. sugar cookies 2

  • 3/4 cup shortening
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1/2 tsp lemon extract
  • 7 Tbsp milk
  • 1 tsp salt
  • 1 tsp soda
  • 1 tsp vanilla
  • 4 1/2 cups flour

Cream sugar and shortening. Add eggs and mix well. Then you will stir in salt, soda and flavorings. Add part milk, then flour, then the rest of the milk. Dough will be very soft. Roll out to desired thickness (we recommend about 1/4 to 3/8 inch) and cut with cookie cutters. Bake at 375 for five minutes. Watch closely and don’t overbake!

Cream together:

  • 1 cup shortening
  • 1 cup butter

  • 1 tsp vanilla
  • 2 lb bag powdered sugar
  • 1/3-1/2 cup water

Mix in a little powdered sugar with water at a time.

This frosting stays good for up to two weeks and there is no need to refrigerate. It’s also creamy and dreamy. sugar cookies 3sugar cookies 4

Decorating sugar cookies is one of my favorite Valentine’s Day activities. It’s fun for all ages and you can really get creative. Or you can always just plop some frosting on the cookie and eat while you work. Whatever your style is, I won’t knock it.

We hope you have a wonderful weekend and Valentine’s Day surrounded by people you love and tasty baked goods.
