Irish stew 1Saint Patrick’s Day is a popular Irish holiday, so what better way to celebrate it yourself by incorporating something Irish into your day? There are some wonderful and hearty Irish dishes that would make an extra celebratory dinner for your Saint Patrick’s Day holiday.

If you are short on time that day, you’re in luck. This Irish stew recipe is easy to throw in the crock-pot. It’s also packed full of protein and vegetables.

Irish stew is any variety of meat-and-root vegetables stew native to Ireland. As in all traditional folk dishes, the exact recipe is not consistent from time or place to place. So no pressure, you can’t really mess this up too badly. Irish stew 2

Layer peeled and sliced potatoes, sliced carrots, and chopped onions in your crock-pot. Salt and pepper each layer. Then add chunks of cooked mutton (we used round steak but the lamb will make it more authentically Irish), two cans of tomato soup, two cans of water, and one can of mushrooms.

Cook on high until boiling. Once the contents come to a boil, reduce heat to low and cook all day (about eight hours).Irish stew 3
